Grilled Jerk Shrimp and Pineapple Skewers

Grilled marinated shrimp and sweet and juicy pineapple skewers!
In my summertime adventures of grilling, I go south to the Caribbean to eat some Jamaican shrimp on the grill with a delicious homemade marinade of jargon. Jamaican Pajilleros come in the form of a paste or pickled and the main ingredients are allspice, Scottish hat bell pepper, green onions, thyme, nutmeg, and garlic. I like to make my own jerk marinade from scratch and although the list of ingredients can belong it is super easy to make and you should already have most of the ingredients in your pantry. This jerk shrimp is as easy to make as the shrimp in the marinade to marinate, tilt, and roast! The idiot shrimp is typically on the spicy side, so I like to serve it with fresh fruit or sauces, especially in the summer! The only thing better than fresh fruit is fresh grilled fruit, so why not throw something like pineapple or peaches on the skewer along with the grilled shrimp? It’s hard to put grilled meat on a stick for the summer, but throw some fruit into the mix and you should have one of the most perfect bites!

Spicy grilled jerk marinated shrimp and sweet and juicy pineapple skewers!


ingredients

  • 1 pound (20-25 or 16-20) shrimp, peeled and deveined
  • 1/2 cup jerk marinade
  • 2 slices pineapple, cut into 1/2 inch pieces

directions

  1. Marinate the shrimp in half of the jerk marinade for at least 20 minutes and up to overnight, skewer the shrimp and pineapple, and grill over medium-high heat until cooked, about 2-3 minutes per side.
