Barbacoa Burritos

Burritos filled with tasty melted grilled meat, pico de gallo, and avocado rice with coriander and lime.
As good as the tacos are, burritos have something about them, how easy it is to wrap everything up and have a convenient meal to eat on the run. One of my favorite burritos is Chipotle’s Mock Beef Barbecue Burrito and it is super easy to prepare at home. The Barbacoa de Carne can be prepared on a slow stove with almost no effort, and then the burritos are as easy as throwing the Barbacoa de Carne together with your favorite burrito filling into the tortilla and wrapping it up! To these burritos, I like to add a simple pico de gallo and a filling of avocado, coriander, and lime rice. If you use cheese in your burritos, it’s a good idea to roast or grill the wrapped burritos to make sure the cheese melts well. If you eat them on the run, wrap them in aluminum foil or wax paper to make sure nothing falls out.

Burritos stuffed full of tasty melt in your mouth barbacoa beef, pico de gallo, and avocado cilantro lime rice.

  • 4 burrito sized tortillas, warmed
  • 1 pound beef barbacoa or Mexican shredded beef, warmed
  • 2 cups avocado cilantro lime rice or cilantro lime rice or cilantro lime cauliflower rice
  • 1 cup pico de gallo
  1. Assemble the burritos, optionally toast, and enjoy!

Option: Add your favorite burrito fillings like guacamole, salsa, cheese, sour cream, etc.
